NEW DATE: Saturday, June 18, 2016
Please mark your calendars with the new date, which has been changed so as not to
conflict with the Country Stampede. Paxico's annual Meatloaf Festival and Cookoff is
held each June in the historic downtown area.

Winning Recipe: Red Cap Cattle Co. Meatloaf

2 lbs. ground beef
1 lb. ground sausage
3 eggs
1 med. onion, diced
1/2 c. Ketchup
2 Tbsp. worcestshire sauce
I sleeve package of Ritz crackers,
crushed (about 32 crackers)
2 cloves crushed garlic, optional

1c. ketchup
1/2 c. dark brown sugar
1/2 tsp. nutmeg

Mix all meat loaf ingredients and form in a loaf.  Mix all sauce ingredients and spoon over
meatloaf. Cover loosely with foil and bake at 350*F for about 1 hour. Remove foil and
continue to bake for another 1/2 hour for a total of
1 1/2 hours baking time.
Note:  I often use this same recipe in the slower cooker. The
directions are identical. However, if desired one may quarter potatoes lengthwise and
place at the bottom of the slow cooker as they take longer to cook than meatloaf. Place
the meatloaf directly on top of the potatoes, place carrots around meatloaf, spoon sauce
over meatloaf and let slow cook for 6-8 hours.
